The following receipt I use both in my everyday menu, as well as I, prepare it for some sort of celebrations. The taste of this Aubergines salad is gorgeous, and no one will guess that this salad is made of aubergines; everyone will be sure that it is of mushrooms.
So, let’s begin. We will require such ingredients:
- 3-4 average aubergines or 5 small ones, just like I have;
- 1 onion;
- 3-4 eggs;
- some vinegar for marinade;
- some mayonnaise for flavoring.

First of all, it is necessary to cut the aubergine into strips, salt them, and leave them for 15 minutes, so the extra bitterness will disappear.
Meanwhile, it is necessary to deal with other ingredients. Cut onions into semirings and marinade it in the solution of vinegar with sugar (I usually use a quarter of a glass of a vinegar and add 3-4 teaspoons of sugar).
Eggs cut into small cubes or just like me, you can use egg-cutter.

It is necessary to wash the aubergines, pour off the extra liquid, and to fry in a vegetable oil till ready.
This part is the toughest from the technician point of view, as it requires your stove to cook the aubergines, while other parts just do not require cooking.

The final step – mixing up all the ingredients:
Flavor with mayonnaise and that is all! The salad made of aubergines is ready. Serve it, decorate it, and put it into the festive or everyday table! Enjoy!
